Chili!



As the weather out side gets colder and colder I look to the world of bloggers for the very best and very easy of Chili Recipes!

If anyone out there has a Chili Recipe that is excellent and relatively easy to make would you send it on my way?

The best chili recipe that I've seen was one that I couldn't write down. It started with very slow cooking of chopped sirloin, chopped onions, garlic and the slow addition of about 15 different ground chili powders. I think I saved that episode on VHS from my Tivo.

80's-even better, if you can give me names of the chili powders or ones you prefer yourself I would appreciate it. Personally I used to just use the chili packets (next to the gravy and taco seasoning packets)

This is going to seem too simple to be good but it is the best chili ever. It's a family recipe from a long-cherished friend and it never fails to please. In fact, we're having some tonight...a little cheddar cheese, a little jalepeno cornbread, oh baby! Hope you enjoy it.


Payson’s Papa’s Chili

Saute in oil:
1 large green pepper, diced
2 medium onions, diced

Add 1 # top round steak, diced and browned.

Add:

3-4 T. chili powder (whatever strength of heat you prefer)
2-4 c. cooked chili beans (use the tinned variety if you wish)
1 28 oz. can tomatoes
1 can tomato sauce

Cook over low heat a minimum of 2 hours on stove top or overnight in a crock pot.

Salt & pepper to taste.

Sounds great but eating chili in the winter may not be wise because in the winter you mostly would have doors and windows closed.

OK ... This is 'to taste', so you can pretty much add as much or ass little as you would like.

In a crockpot is best.
Brown 1 to 1.5 pounds of beef.

1. Tomato Sauce (one big can)
2. Tomato Paste (2 or 3 cans)
3. Diced Tomatoes (2 cans)
4. Lg. can of dark kidney beans
5. 1-2 cups of water
6. 1/4 cup brown sugar
7. Onion (diced or dried, whatever you've got)
8. Garlic powder
9. Parsley
10. Chili powder
11. Oregano (just a tad)
12. A touch of salt and pepper

Like I said, most of this you just have to add to taste. I never measure. I just fill up my crock pot to the top!

Cook on low all day, or if you really have to hurry, you can put it on the stove.

Serve over white rice. Top with shreaded cheese.

Yum! Yum! I think I'll make some this weekend!
